French toast is traditionally made with sweet brioche for an authentic flavour, but there are so many alternatives.
One of which is panettone – a towering round of sweet bread speckled with raisins, citrus, chocolate, and almonds with a plush, buttery texture.
The Italian delicacy comes out at Christmas and New Year in most households and is perfect for French toast.

How to make French toast
In a wide, shallow bowl, beat the eggs, cream, milk, sugar and vanilla extract until smooth.
Cut the panettone rounds horizontally, then quarter them to form slices and place them in the egg mixture.
Turn the bread to coat both sides and leave to soak for 10 minutes, pressing down from time to time to ensure it soaks up the batter.
Meanwhile, place half the thawed berries in a blender with icing sugar and one tablespoon of water. Blend until smooth then combine with the remaining whole berries and set aside.
Place a non-stick frying pan over medium heat and add half the butter. Drain the excess egg mixture from half the panettone slices and cook for one to two minutes on each side until golden.
Keep these warm while cooking the other panettone slices with the remaining butter. To serve, place two slices on each plate, dust with icing sugar and finish with the berry compote and cream.
