Brussels sprouts are a hard dish to perfect that not everyone is fond of. A staple festive side dish, these tiny green vegetables are considered the marmite of Christmas dinner.
If cooked incorrectly, Brussels sprouts can turn mushy and unpleasant. Luckily, one food scientist has shared her recipe that guarantees crispy and delicious sprouts.
Chef and nutritionist, who goes by Live Eat Learn on social media, shared her take on “restaurant-style” Brussels sprouts.
She says the “secret” to good Brussels sprouts is to smash them to release the vegetable’s water, which gives them more surface area to crisp up.
In a video posted on TikTok she said: “I’m a food scientist and this my secret for making the crispiest restaurant-style Brussels sprouts.”
Method:
Preheat the oven to 210C (200C fan). Boil some water in a pot and par-boil you brussel sprouts for around three to five minutes, depending on their size.
Run them under cold water in a colander to stop the cooking process, then dry them well. Add them to a bowl with the nutritional yeast, salt, pepper and oil, and give them a good mix.
Put the brussel sprouts on a baking tray on top of baking parchment, before using the bottom of the glass to crush each sprout.
Bake them in the oven for 20 to 25 minutes or until golden brown.
