Pizza is one of the most popular and comforting takeaway dishes for those days when cooking is not on the cards. However, making it at home can be much easier than it seems.
Jamie Oliver has a super easy, no-oven pizza recipe for two that will satisfy your cravings in under ten minutes – and all you need are a few common ingredients.
Sharing the recipe on his website, the chef said: “Pizza is a dish we all know and love, but this cheat’s version is breaking all the rules!
“You’ll only need one pan and one hob ring for this, so there’s no need to turn the oven on.
“Plus, it’s not only quicker than your average takeaway, it’s far cheaper and contains three of your five-a-day in just one portion.”
Instructions
Place the flour in a bowl and add a pinch of sea salt. Gradually pour in up to 150ml of cold water while stirring with a fork until a dough forms. Knead the dough on a floured surface for about a minute, then set it aside.
Heat a 30cm frying pan over medium-high heat and add a tablespoon of olive oil. Peel and thinly slice the onion, deseed and slice the pepper, and add them to the pan. Season with sea salt and black pepper, cover with a lid, and cook for two minutes, stirring occasionally, until they turn golden.
While the vegetables are cooking, roll out the dough to fit the size of the pan, making it just under ½cm thick. Once the vegetables are done, transfer them to a board and place the dough in the dry pan, pressing with your fingertips to create dimples. Cover with a lid and cook for three minutes on one side, then flip it over.
Drain some liquid from the tomatoes, mash them lightly with a fork, and spread them over the dough, leaving a 1cm border. Scatter the cooked vegetables on top and grate cheese over them, letting some fall over the edges for a crispy crust. Lower the heat to medium, cover, and cook for another three to four minutes until the cheese melts and the base is crispy.
For the salad, shred the outer lettuce leaves, finely slice the stalk, and separate the inner leaves. Trim and peel the carrot into ribbons, then dress with a tablespoon each of red wine vinegar and olive oil, and toss. Slide the pizza onto a board, slice, and serve with the salad.
