Crispy roast potatoes are the ultimate side dish for any feast, and now you can achieve that perfect crunch every time with this secret tip.
Mastering the art of crispy-on-the-outside, fluffy-on-the-inside roasties can be tricky, but fear not, as celebrity chef Jamie Oliver has divulged his tried-and-tested technique to nail them on every occasion.
The culinary star took to TikTok to reveal his step-by-step guide, promising an “11/10” result with his straightforward recipe that’s sure to dazzle your dinner guests, reports the Mirror.
“Introducing the perfect roast potato… crispy outside and fluffy inside,” he declared in his video introduction.
Jamie then showcased the spuds bubbling away, saying, “I’ve got them parboiling in here, in salted boiling water,” before detailing that they should be cooked for about 10 minutes at temperatures between 180C to 190C.
After parboiling, he advised draining them in a colander until they’re “just thinking about breaking up”. Next, he added a splash of oil and a dash of red wine vinegar to a baking tray.
Giving the potatoes a vigorous shake in the colander, he remarked: “Look what I’m doing. See how I’ve beaten them up? I’m gonna cook these in an oven at about 180/190C, which is about 350 Fahrenheit, for roughly 50 minutes.”
He revealed his secret in a video, explaining: “Take the tray out of the oven after 40 minutes, place the potato masher on top, and then just let it pop and let the lovely starchy inside just puff out.”
“Just do that around the whole tray and then pop it back in for another ten minutes. Crispy and fluffy,” Jamie concluded, showing off the deliciously crispy yet fluffy potatoes.
