Chocolate mousse is often made using raw eggs which can be a hassle and if you’re allergic, it is completely ruled out.
It also sometimes needs hours to set in the fridge, or even overnight, meaning lots of planning needs to be involved.
Luckily, Nigella’s recipe uses marshmallows to help it set instantly, so I decided to follow the recipe to see how it turned out.
The recipe notes said: “When you haven’t got time for overnight setting in the fridge or you don’t want to use raw eggs, this mousse is perfect.
“In fact, at all times, constraints or not, it is chocaliciously gorgeous.”
Ingredients:
150g mini marshmallows
50g soft butter
150g dark chocolate, chopped
284ml double cream
One teaspoon of vanilla extract
Method:
I started the chocolate mousse by putting the marshmallows, butter, chocolate and 60ml of boiled water into a saucepan.
I put this onto the hob, stirring continuously to gently melt the ingredients. Once combined, I removed it from the heat.
While the chocolate mixture cools, whip the cream with the vanilla extract until thick.
When the chocolate mixture has cooled down, fold the cream into it until you have a smooth consistency.
The marshmallow, chocolate and butter mix can take some time to cool down so I found it was easier to transfer the contents from the hot saucepan into a cold bowl.
Once combined, I poured the mixture into four small glasses, around 175ml in size.
Then, I placed them into the fridge and they were completely set within 30 minutes. I topped them off with some raspberries before enjoying them.
They were delicious and had a great consistency, although I did find them a little too rich and dark, so would perhaps use a milkier chocolate next time.
The mousse did, however, go well with the raspberries but it would also be tasty alongside some strawberries too.
I was sceptical about using marshmallows in this recipe as I hadn’t ever seen anything like it but it added a lovely texture.
The recipe has 44 great reviews, with some bakers saying they make this mousse every weekend.
Others said they had turned the recipe vegan with plant-based alternatives which also work really well.
