Banana bread is a delicious sweet bread made from mashed bananas, flour, sugar and eggs.
Some recipes contain yeast but most are quick breads that include added extras such as walnuts, chocolate and currants.
I have previously made my own banana bread loaf which tastes incredible sliced warm with a thick layer of butter.
However, banana bread loaves can take hours to prepare and bake with some recipes requiring well over an hour in the oven.
I’m also not a confident baker and fancied a quick and easy sweet treat which wouldn’t take me too long to prepare.
I found this recipe on Instagram from Divya Sharma, known as @doctorbowl, who is somewhat of a banana bread enthusiast.
Many of her recipes include less than 10 ingredients and are quick, simple and delicious.
Rather than using plain flour, I decided to use oat flour. I also added a tablespoon of maple syrup (which is optional) for added sweetness as well as a whole small banana.
Overall, this recipe isn’t too sweet with the banana and chocolate chips being the main source of sweetness.
How to make microwave banana bread mug cake
Ingredients:
Half a ripe banana
Quarter cup of plain flour or oat flour (I used Dove Farms Oat Flour)
Four tablespoons of milk or plant-based milk (I used Sainsbury’s unsweetened almond milk)
One egg or one flaxseed egg
Half tsp of baking powder
Handful of chocolate chips
One tbsp of maple syrup (optional)
Method:
1. Add all the ingredients to a microwave-safe mug. You may need to add more flour if the mix is too wet.
2. Add the chocolate chips.
3. Microwave for 90 seconds to two minutes. If it’s still wet in the middle, microwave for a further 30 seconds.
