The lemon and herb panko-crusted cod is one of the 14 chef-created recipes given when you buy the Ninja Pro AF140UK.
There are also over 300 recipes available on the free app, but there are a few I wanted to try out in the quick start manual first.
Specifically, trying out the air-fryer function – there’s also the ability to roast, reheat, and dehydrate foods – I gave one of the main dishes a try.
To make the lemon and herb panko-crusted cod, all I needed was to do five minutes of preparation and then only 10 minutes in the air-fryer.
Here’s the deliciously fresh-tasting lemon and herb panko-crusted cod recipe that’s worth trying at home.
Lemon and herb panko-crusted cod recipe
Makes: four servings
Ingredients:
- Four 125g cod loin fillets
- One tsp of salt
- 80g panko breadcrumbs
- 50g butter, melted
- Two tbsp fresh parsley, finely chopped
- Zest and juice of one lemon
- Half tsp ground black pepper
Method
Season each cod fillet on both sides with salt. In a small bowl, add salt, breadcrumbs, melted butter, parsley, lemon zest and lemon juice and pepper.
Mix the ingredients (except the cod) together until the breadcrumbs are thoroughly coated.
Generously pack the top of each cod with the breadcrumb mixture, pressing down to adhere. With the crisper plate in the air-fryer drawer, place the fillets breaded-side-up on the crisper plate and insert the drawer into the unit.
Select “air fry”, set the temperature to 170C, and set the time to 12 minutes. Select “start” to begin cooking. When two minutes remain, check if the cod is cooked. If needed, cook for an additional two minutes.
When cooking is complete, the internal temperature (if you’re checking with a thermometer) will read 65C. Remove fillets and serve immediately.
I think these cod fillets, which came out amazingly well, taste loveliest when paired with a juicy salad with tomatoes.
Air-fryers are available to buy from Ninja Kitchen, Currys, and Argos.
