How to make sausage rolls: Jamie Oliver’s quick and easy recipe would be great at a picnic

As the weather gets warmer more people will get their best blanket out of the closet for a picnic – but no summer spread can be complete without some sausage rolls.

Jamie Oliver’s homecooked sausage roll recipe is super easy to prepare and is packed with flavour to make them the ultimate savoury snack.

On his website, Jamie said: “Absolutely beautiful served warm from the oven, these tasty sausage rolls are a total joy.”

It is incredibly simple to prepare these sausage rolls, as all you have to do is cook the onions, and mix the sausage meat ingredients together before spreading it onto the pasty to bake in the oven.

These sausage rolls are perfect for a picnic but will be just as tasty if served at a barbecue, afternoon tea or even as a fun treat for yourself to enjoy on a lazy sunny afternoon.

Method

Preheat the oven to 180C or Gas Mark 4.

Heat the olive oil in a saucepan and add the onion, then cook gently for 20 minutes until soft and a golden brown colour.

Add in the sage leaves and cook for a few minutes more, then place the onions and sage on a plate and set aside to cook.

Remove the sausage meat from the skins and place it in a mixing bowl with the cooled-down onion and sage mixture.

Add the breadcrumbs and grated nutmeg then scrunch the mixture with your hands to mix it together.

Lightly flour a surface and roll out the pastry into a big rectangle about as thick as a pound coin and cut it lengthwise into two even rectangles, then add the sausage mixture to the centre of each rectangle.

Mix the egg and milk together in a small bowl to make an eggwash and brush the pastry with the mixture, then fold one side of the pastry over to wrap the filling inside. Use a fork to press down on the edge of the pastry to seal the joint.

Cut the long sausage rolls into smaller sizes and space them out on a baking tray. Brush the rest of the egg wash on top of the pastry and cook in the preheated oven for 25 minutes or until the pastry is golden brown.

Your tasty sausage rolls are now ready to be served.
