Jamie Oliver’s pork and apple sausage rolls recipe
Ingredients
One leek
One Royal Gala apple
Four sprigs of fresh thyme
500g minced pork
Half a teaspoon mustard seeds
500g puff pastry
One large free-range egg
Method
Preheat your oven to 200°C (400°F), or gas mark 6. Clean and trim the leek, then chop it along with the apple after removing the core. Pick the thyme leaves from their sprigs.
In a bowl, mix the pork with the leek, apple, thyme, and mustard seeds. Season to taste and set the mixture aside.
Roll the pastry out to a thickness of 1cm, aiming for dimensions of 34cm by 30cm. Cut the pastry lengthwise into two strips and spoon the mince mixture down the center of each strip.
Brush the edges with beaten egg, then roll the pastry around the filling and seal the edges. Brush the tops of the rolls with more egg, then cut each strip into three pieces.
Score the tops and bake for about 20 minutes, or until golden and fully cooked.
