How to make Nigella Lawson’s delicious ‘fudgy and rich’ 30-minute chocolate brownie recipe

Nigella Lawson has shared a plethora of recipes over the span of her career, but this brownie recipe has got to be one of her best.

Not only does the recipe give to delicious fudgy brownies but it tops it off with an indulgent chocolate sauce that is best served hot.

She said: “However many people have eaten, there is always, I’ve noticed, room for a brownie. This is a different kind of brownie, most definitely for party pudding, melting, fudgy and damply rich.

“I compound these qualities by serving it with ice cream and the hot chocolate sauce, but there is no need.”

Express.co.uk has previously tested out another one of Nigella Lawson’s chocolate brownie recipes and it did not disappoint.

Ingredients

For the brownies

225g dark chocolate (minimum 70 percent cocoa solids)

225g butter

Two teaspoons vanilla extract

200g caster sugar

Three large eggs, beaten

150g ground almonds

100g chopped walnuts

For the hot sauce

75g dark chocolate (minimum 70 percent cocoa solids)

125ml double cream

Two teaspoons instant espresso powder

One tablespoon golden syrup

Method 

Start by preheating the oven to 170°C/150°C fan/gas mark 3 and melt the chocolate and butter gently over a low heat in a large saucepan.

Once melted, take the pan off of the heat and mix in the vanilla and sugar, then let it cool.

Next, beat the eggs into the pan along with the almonds and walnuts before pouring the mixture into a nine-inch square baking tin.

Leave the mixture to bake in the oven for 25 to 30 minutes. By this time the top will have set, but the mixture will “still be gooey”.

Once cooled, divide the brownies up into 16 squares by making four slices down and four slices across.

While the brownies are cooling, you can make a start on the hot chocolate sauce. For this, start by breaking up the chocolate and put it in a pan.

Next, dissolve the instant express powder in two tablespoons of water and add this, along with the remaining ingredients for the sauce. Then put the pan on a gentle heat and let everything melt.

After the mixture has melted, stir well and take it off the heat. Then pour it into a jug to serve.
