Deciding what to make for dinner can be difficult, but this mouth-watering chicken dish is incredibly easy and quick to make in only 30 minutes.
Marry Me Chicken is a tasty Italian-American dish made with tender chicken, flavourful sundried tomatoes and a simple but delicious creamy sauce.
Sarah Rossi, a cookbook author and founder of the recipe website Taming Twins, has shared that Marry Me Chicken only takes five minutes to prepare and takes around 25 minutes to cook from scratch.
She said: “The combination of pan-frying the chicken as well as simmering it in the sauce gives a delicious golden coating with a succulent meat on the inside. The sauce is just the right balance of creamy, zesty and cheesy.
“While there’s so much wonderful flavour, it’s also a pretty simple recipe and anyone can make it, which is the ultimate test of how well a recipe is received! No nonsense. Just delicious.”
This dinner is also super versatile as you can serve it with pasta, rice or even with some potatoes and vegetables so you can adapt it for whatever sides you fancy.
How to make Marry Me Chicken
Ingredients (serves four)
- 650g of chicken breast (skinless and boneless)
- 150g of sundried tomatoes (drained and chopped)
- 50g of plain flour
- 50g of parmesan cheese
- 15g of basil
- 200ml of chicken stock
- 150ml of double cream
- Three garlic cloves (chopped)
- Two teaspoons of paprika
- One teaspoon of dried oregano
- One tablespoon of olive oil
- Lemon juice
- Salt and pepper
Kitchen equipment needed:
- A large deep frying pan with a lid
Method
Add one tablespoon of olive oil to a frying pan and then a heat up the pan on a medium heat.
Coat the chicken breast in flour and once the pan is hot, add the chicken breast to the pan and cook for five minutes on each side for a total of 10 minutes. Then remove the chicken breast from the pan and leave to rest on a plate for now.
Place the pan on a low heat and add the garlic, sundried tomatoes, oregano and paprika and cook for three to five minutes until the garlic is soft.
Add the cream, chicken stock, parmesan cheese and season with salt and pepper, then give the sauce a good stir.
Sit the chicken back into the sauce, then place the lid on the pan and leave to simmer for five minutes, then flip the chicken over and cook for another five minutes.
Check the chicken is fully cooked through, then squeeze over the lemon juice and sprinkle over the basil leaves and your mouth-watering dinner is now ready to serve.
