How to make a delicious one-pan chicken curry in only 15 minutes – super easy recipe

Nothing is better than a curry, but you do not have to order a takeaway as you can make a mouthwatering chicken curry in only a few minutes.

Irena Macri, a cook and founder of Cooked and Loved has shared her incredibly easy recipe to make “chicken curry in a hurry” in only 15 minutes.

She said: “It’s inspired by Indian curries like chicken tikka masala or butter chicken. The sauce has a tomato coconut base, which works superbly well with chicken. It has a little kick but isn’t too spicy; it’s lovely and mild. You can always add more chilli if you like.

“This is a perfect quick dinner meal to make during the week when you’re short on time. Kids will love it, partners will love it and your granny will enjoy it.”

The secret for this dish being so quick to make is using pre-cooked chicken, which you can use leftovers, but you can also buy Rotisserie-style or cooked chicken at the supermarket.

Method 

To begin, chop up the onions and carrots, then heat the oil in a frying pan over a medium-high heat.

Add the diced onions and carrots to a pan, season with salt and pepper and cook for five minutes or until softened.

Chop up the garlic, grate the ginger, then add to the frying pan and stir for 10 to 15 seconds.

Add the turmeric powder, garam masala and curry powder, then stir through.

Pour the tin of tomatoes and tin of coconut cream into the pan and stir through.

Finally, add the diced cooked chicken and stir until heated through, then sprinkle on the fresh coriander and your delicious curry is now ready to serve.
