A mum’s mac and cheese recipe, boasting simple ingredients and straightforward steps, promises to leave everyone at the dinner table utterly content.
There’s nothing quite like gathering with your nearest and dearest on a Sunday to savour a home-cooked feast. Yet, after an exhausting week, mustering the energy to spend hours in the kitchen preparing a banquet for the family can seem like a mammoth task you’d rather avoid.
So, it’s the perfect time to whip out your slow cooker, allowing you to simply toss in the ingredients and serve when ready. Nutritionist and food content creator Molly Cunnnigham has divulged her perfect Sunday dish that will not only fill you up but also pack a nutritional punch. Her scrumptious slow cooker ‘5 a day’ mac and cheese is bound to dazzle any diner.
Molly shared: “I made a big slow cooker full of this today as meal prep for the rest of the week as it’s a really good way to pack in lots of veg in a yummy and comforting way in this cold weather.”
She added: “Hiding veg in meals like this is also such a good idea if you are or live with anybody who struggles to eat enough veg, you really can’t taste it but end up getting all those extra vitamins and minerals that we need in these colder months.”
Here’s how to make Molly’s slow cooker mac and cheese
Ingredients you will need
Start by adding your packet of vegetables, seasoning and water to your slow cooker. Cook on high or 1-2 hours until soft. Molly did note that you can skip this and microwave them if you want to. When the veg is soft, blend with a hand blender for a few minutes until soft.
Now, add your dry macaroni and milk and stir well, leave on high for one hour or until the pasta is soft. “Make sure to keep stirring and add more milk if needed,” Molly added.

Once the pasta is soft, stir in your grated cheese and mayo, top with some extra cheese and place under the grill until it is crispy on top.
While it was under the grill, put some bacon rashers into the air fryer (or in a pan if you do not have one). Once ready, chop the bacon up into small pieces and add on top of your cheese. You could also serve with chicken, fish or tofu.
