If you’re a lover of traditional carrot cake, consider trying it out in the form of macarons. A macaron is a sweet treat that is usually meringue-based. It is often made with egg whites, icing sugar, almond meal, and other ingredients.
Macarons usually come in flavors like chocolate, vanilla, and lemon. Chef Gordon Ramsay’s twist on them with a carrot cake flavour includes walnuts, and spices like cinnamon, ginger, and nutmeg.
They will give you the carrot cake flavour that you can’t get enough of, without having to commit to an entire piece of cake.

Cooking Instructions
1. Preheat your oven oven to 170˚C/gas 3.
2. Place the coconut, cinnamon, ginger and nutmeg into a bowl and mix the ingredients well.
Throw in your chopped walnuts, grated carrot, sugar, egg whites and a bit of salt and mix it together until everything is completely integrated.
3. Grab a baking tray and line it with greaseproof paper and drop 18–20 heaped dessertspoons of the mixture on to the tray.
Leave a gap of at least 1cm between the items. Construct the mounds to be somewhat circular.
Place the tray into the preheated oven and bake it for 15–20 minutes, until it is a nice golden colour and firm on the outside. Leave it to cool down on a wire rack before serving.
