In his cookbook ‘Ramsay in 10’, Gordon wrote: “After much experimenting, these individual puddings were born. Cooked in the microwave in a matter of minutes, they are as sticky, gooey and deeply tasty as the real thing.”

This cosy dessert is perfect for the weekend as a treat to warm yourself up during the harsh winter weather, as it is easily baked without even having to turn on the oven.

This recipe serves one but can be repeated several times to make more sticky toffee puddings, but may take longer than 10 minutes to cook them.

Instructions 

To begin, grease your microwaveable pudding bowl with butter.

In another microwavable bowl, place the dates in the bowl alongside three tablespoons of water.

Put the bowl in the microwave and cook on full power for 30 seconds. Remove the bowl and mix in your baking powder.

In a separate bowl, beat together butter, brown sugar, and maple syrup until fully combined. Once mixed, add the date mixture to the bowl and stir together.

Crack in an egg to the mixture and also add in the flour. Mix well until fully combined.

Pour in the mixture into the pudding bowl and cover with a piece of kitchen paper. Place the pudding bowl in the microwave and cook in 30-second increments.

Every 30 seconds, take the pudding bowl out of the microwave and tap the bowl lightly on a counter.

Repeat this five or six times until the pudding has doubled in size. Set it aside and let it rest for two minutes.

While the pudding is resting, make the toffee sauce. Place butter, golden syrup, brown sugar, and cream into a small saucepan and bring to a boil over medium heat.

Place the pudding onto a serving plate and pour over your hot toffee sauce.

Your delicious dessert is now ready to eat. Gordon recommends serving it with a dollop of creme fraiche on the side.
