Everyday activity is the reason ‘eggs go rotten’ faster

A storage expert has settled the debate of whether to store eggs in the cupboard or keep them chilled in the fridge, declaring the fridge as the best place overall. However, even if you store your eggs in the fridge, the exact spot in the fridge could be the reason your eggs go rotten much sooner than expected.

Vlatka Lake, storage expert from UK storage company Space Station explained: “When it comes to eggs, there is a huge debate on where they should be kept, with some saying in the fridge and others saying on the counter.”

“The general consensus is to store eggs in the fridge, but not in the egg racks commonly found on the fridge door. Egg racks are susceptible to changes in temperature due to the fridge door opening and closing and can cause your eggs to go rotten more quickly.”

This means that every time you open your fridge door you could be reducing the amount of time you have to use your eggs. Instead, Vlatka recommends moving your eggs onto one of the shelves of your fridge and steering clear of the egg racks in the doors.

You should also try to store your eggs away from any strong-smelling foods. This is because egg shells are porous and strong smells could impact the flavour or scent of your egg.

According to experts from EggInfo.co.uk: “The fridge is the best place to keep them in domestic kitchens. Take them out of the fridge half an hour before cooking for the best results, otherwise, the sudden change in temperature could crack the shell or lower its binding qualities in baking.”

The experts also advise keeping your eggs in their original boxes when storing them. This ensures any odours from surrounding foods are shut out.

If you do take your eggs out of their box to store them, make sure to organise them in date order. According to the experts, storing eggs at a constant temperature below 20C is the best way to maintain freshness and preserve quality.

You should avoid using any dirty, cracked or broken eggs and it is important to always wash your hands before and after handling eggs.
