When it comes to a Christmas dinner, we all have our favourite components – and crispy roast potatoes always leave people satisfied around the table.
While potatoes are one of the most simple things to cook, it’s no secret spuds can be a little boring and lack flavour. So, in a bid to impress guests, following this flavoursome recipe could be the ticket to nailing your roasties this festive season.
Foodies have been left drooling over a viral recipe, created by chef Sam Seats, which raked in over 18million views. The online sensation, who has a whopping 9.9million TikTok followers and 2.81million YouTube subscribers, says his “mighty roast potatoes” will “help you make the best tasting Christmas meal you’ve ever had”.
“This is THE perfect potato for any roast or Christmas dinner, or simply to go alongside a bowl of rich gravy,” he added.
Drooling watchers rushed to comment, as one said: “Oh my God, I’d actually devour them.” “Wow, making these tonight,” added another.
The good news is it is cheap to make and serves between six and eight people. To make the treats you will need…
Ingredients:
- 2kg King Edward potatoes peeled and cut into chunks
- Few peeled and crushed garlic cloves
- 500g goose, duck, or beef fat
- Few sprigs of rosemary
- Zest of one lemon
- Generous sprinkling of sea salt
Method:
Follow Sam’s simple method to create the delicious-looking potatoes at home.
- Place the potatoes in a pot with a pinch of salt and garlic cloves – you can also optionally add some rosemary springs
- Cover with water and bring to boil
- Cook for 10 minutes until potatoes are fork tender – but not falling apart
- Preheat over to 200C/390F fan
- Drain the boiled potatoes and let them steam dry in the colander for a few minutes
- Return them to the dry pot, cover with a lid and shake to lightly ‘fluff’ them – the secret to achieving crispy edges
- Place the goose fat into two baking rays as well as the potatoes and place them in the oven
- Preheat the oil for 15 minutes, remove the tray from the oven and carefully add in
- Coat each potato in the goose fat then place them back in the oven.
Now, you should cook the potatoes for 60-75 minutes in the oven, turning every 20 minutes or so to coat evenly in the oil. Sam says while cooking, prepare the rosemary salt before blending together, or finely chopping, the rosemary, lemon zest and salt.
He added: “Once the potatoes have cooked and are a golden brown colour all over, remove them from the oven and lift out of the tray with a slotted spoon. Toss the potatoes in a bowl with a sprinkling of the rosemary salt and some extra finely chopped rosemary.”
