Creamy tomato soup recipe made with just three-ingredients – takes just 20 minutes to cook

Tomato soup is a classic amongst Britons and with the weather getting colder, it’s a great thing to cook.

Although you can easily pick up a can of tinned soup from the supermarket, it’ll taste so much better making it from scratch – and it’s super simple.

A fitness expert known as @coach_lil on TikTok has shared a three-ingredient tomato soup recipe that’s quick, easy and super nutritious.

The fitness fanatic described the soup as “creamy” but noted that it “has no cream” in it.

The TikTok video was captioned: “There-ingredient soup. Low sodium, high antioxidants, easy and fast.”

She said: “The only ingredients you’re going to need are two cans of tomatoes, a quarter cup of store-bought pesto, one cup of cashews and a quarter teaspoon of salt.”

Start by mixing all of these ingredients well in a pan on a low heat.

Leave this to simmer until the chasers start to soften. The expert said: “I let it simmer for about 20 minutes.”

Leaving it for 20 minutes gives it “plenty of time” to cook. Once the cashews are nice and soft, give it some time to cool.

When making this soup, it’s important to “stir often” as the tomatoes can burn at the bottom of the pan.

Once cooled slightly, transfer it to a blender or food processor and you’ll see that deep dark red shade of the tomatoes change colour.

The TikToker pointed out that the cashews are the ingredient that “will really give it a good creaminess”.

The expert said: “Now you have a tomato soup super high in antioxidants and you can add any additional flavourings.”

The influencer added more salt and, some truffle oil and a little vegetable stock as she likes it “just a touch thinner”.
