Coffee cake is one of the easiest desserts to make while still having lots of flavour and is the perfect cosy treat to pair with a cup of tea.
Jamie Oliver’s mouth-watering coffee cake recipe is no different as can be prepared in only 15 to 20 minutes before it bakes in the oven for 20 more minutes.
He said: “This cake is a favourite afternoon pick-me-up, but you can use decaf coffee if you are baking for children or anyone sensitive to caffeine. ”
This is the perfect cake to treat yourself on a lazy weekend afternoon or to make for guests on a special occasion, as it is made with simple ingredients in eight easy-to-follow steps.

Instructions
To begin, preheat the oven to 180C (Gas Mark 4), then grease the cake tins with butter and line the bases with baking paper.
Place two-thirds walnuts in a food processor and blitz until they are a powder. Place the powdered walnuts in a mixing bowl along with the butter, then cream the butter until it is light and fluffy.
Add the eggs to the mixing bowl and stir through. Once fully incorporated, add in the flour, baking powder, and a pinch of sea salt. Roughly chop up the rest of the walnuts and add to the cake mixture along with the cup of cold espresso.
Divide the cake mixture between the two cake tins and then bake in the oven for around 20 minutes, or until they have risen and are lightly golden in colour.
Once ready, take the cakes out of the oven and leave to cool inside the tins for five minutes, then take out the tins and leave to cool on a wire rack.
To make the coffee cake filling, slice and butter into cubes and place in a mixing bowl. Sift in the icing sugar and beat until you have a light and fluffy mixture, and then pour in the espresso and mix it until you have a smooth filling.
To make the coffee cake icing, sift the icing sugar into a mixing bowl, slowly add the espresso and mix until you have a thick icing.
Then place one of the cakes on a plate and spread all of the coffee filling on top. Place the second cake on top of the cake covered in filling and then spread the icing all over the cake.
Decorate the cake with any remaining walnuts, and your tasty coffee cake is ready to serve.
