There’s nothing tastier than cheese and rosemary biscuits with a buffet dinner, especially when they’re homemade.
This recipe from BBC Good Food has more than 20 five-star ratings from bakers, claiming this is their go-to biscuit recipe to use when they’re hosting.
The recipe notes said: “These savoury biscuits are deliciously cheesy, and are so easy to make.
“They also make a lovely gift and you can leave out the rosemary if you prefer.”
It makes 25 biscuits and they bake in just 12 to 14 minutes, perfect for a last-minute treat.
Ingredients:
80g wholemeal flour
80g plain flour
100g cold butter, chopped
100g cheddar, finely grated
One small rosemary sprig, finely chopped
One large egg yolk
Method:
Start by preheating the oven to 180C/160C Fan and put the flour in a bowl, rubbing in the butter until it resembles breadcrumbs.
Stir in the cheese and rosemary, then add the yolk and mix in using a fork.
When the mix starts to clump together, use your hands to knead to a smooth dough.
Take walnut-sized pieces of dough, roll them into balls and place them on one or two lined baking trays.
Flatten slightly with a fork and then simply bake for 12 to 14 minutes.
Alternatively, roll out between sheets of baking parchment and cut them into shapes, then bake for 12 to 14 minutes.
Cool on the baking sheet for a few minutes before moving them to a wire back to cool completely.
These biscuits are best served on the day but can be stored in an airtight container for up to a week.
