A good old festive breakfast is a staple in many British households, with eggs Benedict, a classic fry-up or a huge pancake tower often featured on the menu.
However, if you have enough leftovers from Christmas Day to feed the whole neighbourhood, you might be reconsidering your Twixmas brunch options.
That’s where this simple, quick and delicious leftover Brussels sprouts bubble and squeak from Easy Peasy Foodie comes in.
Using just five ingredients, this recipe takes only five minutes to prepare and a further 10-minute cook time.
This scrummy side dish for four can also be accompanied with your favourite green salad or some baked beans, alongside any leftover cold meats or sausages.
Brussels sprouts bubble and squeak recipe
Ingredients
300g leftover sprouts (and/or other leftover vegetables)
750g leftover mashed or roast potatoes
25g butter (or two tablespoons olive oil)
Four tablespoons milk or cream (optional)
Salt and pepper
Method
Mash the sprouts (or any other leftover vegetables) with the potatoes, adding milk, salt, and pepper to taste. Form the mixture into small patty shapes.
Spread a little plain flour on a plate, then lightly coat each patty in the flour.
Heat butter in a frying pan over medium heat, swirling it to cover the base. Add the patties and cook for about five minutes on each side, or until they are golden brown.
If you’re making a larger batch or want to prepare them in advance, keep the cooked patties warm on a plate in a low oven and continue frying the rest.
