The recipe, which debuted in the ‘4 Ingredients – Fast Fresh and Healthy’ cookbook by Kim McCosker, is one of her “time and money saving” formulas.
It comprises a simple blend of typical baking ingredients – flour and sugar, plus two other items.
Along with bananas, the delicious sweet bread is made with a condiment often drizzled over chips and spread over sandwiches – mayonnaise.
Showing YouTube users how to make the recipe in a video posted on her channel ‘The Easiest Cooking Show Ever‘, Kim urged home-bakers to “hang in there” and consider how beneficial it is to the banana bread.
She pointed out that mayonnaise is simply “just your eggs and oil in one ingredient” and makes for a “sensational” result.

- Two very ripe bananas, mashed
- Half a cup of caster sugar
- One cup of mayonnaise
- Two cups of self-raising flour
Kim noted that a little bit of ground cinnamon or maple syrup is great for adding extra flavour, though not essential to the recipe which “tastes sensational” without it. Alternatively, sprinkle with a little nutmeg on top before baking.
Before making a start on the cake, Kim urged home bakers to consider how ripe their bananas are.
She said: “Remember, the darker the skin the sweeter the fruit, [which means] less sugar is required to make this a naturally sweet cake.”
To make the cake batter, first, peel the bananas and place them in a large mixing bowl before mashing them with the back of a fork.
Continue to mash until smooth then add half a cup of fine sugar, preferably caster sugar. Described as “the star ingredient” of the recipe by Kim, mayonnaise is the next ingredient to add to the banana and sugar mixture.
Next, sieve in the flour and stir everything together until blended into a pale yellow mixture.
Take a standard-sized loaf tin, grease lightly with butter and line it with greaseproof paper, allowing some overhang of the paper over the sides.
Heat the oven to 180C and pour the batter into the prepared loaf tin. Kim suggested cooking it for 40 minutes or until cooked through.
She said: “Now this I swear is one of the nicest loaves you will make. It’s one I make and is enjoyed by everyone I serve it to.”
