Ingredients

  • 6 pork sausages
  • 10 sage leaves, finely sliced
  • 3 tbsp apple sauce
  • 320g pack ready-rolled puff pastry
  • plain flour, for dusting
  • 1 egg, beaten
  • 2 tbsp nigella seeds (optional)

Method

Firstly, you’ll need to squeeze the sausage meat out of its casings and into a bowl. Mix in the sliced sage leaves, apple sauce and a generous pinch of salt and freshly ground black pepper before setting aside.

Next, take your ready-rolled pastry and unroll it, removing the parchment lining and placing the pastry on a lightly floured surface. Mould the sausagemeat into a log across the centre of the pastry. The sausage should be 4cm to 5cm thick and extend to both ends of the pastry.

Apply the beaten egg over the longer edges of the pastry, then carefully fold one side over to the other so the sausage is encased, leaving a lip of pastry on one side. Trim away the excess pastry before using a very sharp knife to cut the sausage log into six to eight pieces.

With a knife or fork, crimp the trimmed edge. Use the remaining egg to glaze the pastry all over. If you wish to add nigella seeds, sprinkle them over the top.

Preheat your air fryer to 200C and bake the sausage rolls for 20 to 30 minutes until the pastry is cooked and golden and the sausage meat is thoroughly cooked. As not all air fryers are the same, Good Food recommends checking halfway through cooking to see how the sausage rolls are progressing, and to adjust the cooking time if necessary.

You can savour your sausage rolls warm straight from the air fryer, or if you’re waiting for them to cool, they will keep chilled for up to three days.
