‘Really easy’ air fryer banana bread is perfect for picnics

Banana bread is a classic treat which can be enjoyed as a sweet breakfast or a delicious bite with a coffee. However, food blogger and chef Helen Schofield has a twist on the traditional baked item, explaining how to make a miniature version of the much-loved treat. To top it off, there is no need to heat your oven as this goodie can be made in the air fryer.

“Yes, you can bake banana bread in your air fryer,” Helen said in a recipe for the website Scrummy Lane. ” This mini air fryer banana cake recipe is perfect if you have a lonely overripe banana in your fruit bowl. Crunchy on the top and moist and fluffy on the inside, it’s super easy to make in around 30 minutes.”

The recipe can also help to avoid food waste, making use of bananas which have turned brown and slightly mushy.

“Banana bread usually takes about an hour to bake,” explained Helen. “But this small batch version takes only 30 minutes, whether you bake it in your air fryer or the oven.”

Step one: Preheat your air fryer to 160C and line a small baking dish or loaf pan with baking paper.

Step two: Mash your banana – you only need to use a fork. Then wish in all of your other ingredients: the egg, sugar oil, and optional pinch of salt. Then, finally, add the flour and baking soda. Combine well but don’t be worried about a few small lumps.

Step three: Pour or scrape the batter into the baking dish or loaf pan.

Step four: Put the pan or dish into your air fryer and bake for 30 minutes. You can check how your batter is cooking by using a toothpick. Stab this into the surface and if it glides out with ease then the middle is cooked enough.

If there is still some raw batter, turn the bread upside down and pop back into the air fryer for an additional five minutes.

Step five: Remove and serve.
