Gravy is the staple of any roast dinner, but there is one cheap yet unusual ingredient that can make it even richer and more flavourful
Jamie Oliver has shared that the best way to uplift your gravy is to add a spoonful of jam when cooking it from scratch.
In a roast dinner recipe video online, Jamie said “The little secret ingredient I love is just some beautiful jam. That little sweetness really helps the gravy sing really nicely.”
It may seem like a strange cook choice, but jam melts away quickly in the hot gravy and not only helps enhance the taste of the meat but gives it a silky smooth texture.
Jam is also slightly acidic as it is made from fruit, which can add a refreshing tanginess to the meaty mixture and will complement the herbs, vegetables and spices already in the gravy.

Instructions
All you need to do is add all your vegetables to the roasting tray before placing your roasting meat such as beef or chicken on top.
Once the meat is done fully cooking in the oven, remove the meat and place it on a plate to cool down.
The vegetables in the tray along with the meat juices are the basics of the gravy. Place the roasting tray on the stove on a high heat.
Use a masher to squeeze the garlic out of its skin and disregard the skin. Mash up the rest of the vegetables into a fine pulp.
Add a heaped table of flour to the vegetables to get a thick gravy, then add half a glass of red wine.
Once thoroughly mixed, add a teaspoon of jam to the mixture alongside a lire of hot stock. The type of stock will depend on the type of roast you are having.
Bring the gravy to a boil then leave it to simmer for half an hour. Once ready, use a strainer to get rid of the vegetable pulp and your mouth-watering gravy will be ready to serve.
Jamie said: “Simmer [the gravy for half an hour which is the same time you should rest the meat. It’s going to be delicious.”
