‘Delicious’ sugar-free strawberry cheesecake recipe

In the six weeks leading up to Easter, giving up on sweet sugar for Lent is not only a testament to good faith but also good for your health.

While giving up sugar can seem daunting, as so many baked goods contain sugar, you can still satisfy your sweet tooth with a sugar-free strawberry cheesecake.

For those concerned about the amount of calories in the cheesecake, you may be pleased to know that one serving is equivalent to 312 calories.

As women are advised by the NHS to eat up to 2,000 calories per day, and men 2,500 calories, you can rest assured that a slice of strawberry cheesecake is a great little treat to include within the daily calorie limit.

To make an eight-inch cheesecake, serving up to six people, you only need to prep for around 20 minutes.

No-bake, sugar-free strawberry cheesecake recipe

Ingredients:

Three-quarters of a cup of graham cracker crumbs
Three tablespoons butter, melted
A quarter teaspoon of ground cinnamon
A quarter teaspoon of ground nutmeg
One package of cream cheese, softened
One-and-a-half cups of milk
One package of cheesecake flavour sugar-free instant pudding mix
Two pints of fresh strawberries, sliced

Method:

Gather all the ingredients, then combine the biscuit crumbs, melted butter, cinnamon and nutmeg in a bowl.

Press the mixture into an eight-inch pie dish and refrigerate the base while making the cheesecake filling.

To make the cheesecake filling

Beat cream cheese in a mixing bowl with an electric mixer on medium speed until softened.

Reduce the speed to slow, and gradually beat in the milk – you will notice the mixture is watery.

If necessary, use a rubber spatula to scrape cream cheese from the sides of the bowl.

Beat in the pudding mix until the filling is thick and smooth, then spoon half of the cream cheese filling onto the bottom of the prepared base.

Spread half of the strawberries over the filling, then repeat the process with more filling and strawberries for a layered effect.

Now chill the cheesecake in the refrigerator for at least an hour so that it sets.

And there you have it, an indulgent and “delicious” strawberry cheesecake that contains no added sugar.

By removing sugar from the diet for six weeks, don’t be surprised if you drop some weight.

Academics at Birmingham City University released a study that said reducing sugar intake could lessen the risk of high blood pressure, heart attack and tooth decay, which means you can enjoy this strawberry cheesecake guilt-free.
