Chef Leung Yu-king of Summer Palace in the Island Shangri-La, Hong Kong hotel, in Admiralty on Hong Kong Island, has prepared a special à la carte menu to showcase hairy crab.

Four new dishes feature on the 10-item menu – poached fresh clam and baby cabbage, steamed fresh egg white with Boston lobster, and baked Hokkaido scallops, all smothered in hairy crab roe sauce, and braised stuffed bird’s nest with bamboo fungus in hairy crab’s roe.

2. Man Wah
