Strawberries and cream puff pastries

Ingredients

  • Sheet of ready-rolled puff pastry
  • One egg
  • Splash of milk
  • 300ml double cream
  • One tbsp vanilla extract
  • One tbsp icing sugar plus extra for dusting
  • Nine strawberries

Method

  1. Preheat the oven to 180C and roll out the pastry, allowing it to sit for 10 minutes at room temperature before using. Make a simple egg wash by whisking up the egg with a splash of milk.
  2. On a sheet of greaseproof paper, cut the puff pastry into nine equal slices. On each slice, score a slightly smaller square – without cutting all the way through – and score diagonally crossed lines within these. Brush lightly with the egg wash and bake in the oven until golden according to the packet instructions. If you’re using Aldi’s puff pastry, this should take between 15-25 minutes.
  3. Meanwhile, prepare the cream filling. Whisk the cream, vanilla and icing sugar until light and fluffy.
  4. When the pastries are out of the oven and cooled, pop the cream filling into a piping bag and and pipe a swirl onto the centre of each pastry.
  5. Top each one with a strawberry sliced in half, dust with icing sugar, and serve.
